OUR MUSHROOMS
In addition to our indoor mushroom production, we also grow mushrooms outdoors. We grow small amounts of several gourmet mushrooms outdoors, but we primarily grow shiitakes (lentinula edodes) and oysters (pleurotus ostreatus). The shiitakes, in particular, lend themselves to reliable harvests through proper bolt management. Shiitake bolts, short lengths of inoculated logs of the appropriate species, incubate for approximately a year in a 35 year old stand of white spruce trees. Then, set of these bolts are shocked into fruiting, yielding, a week later, a beautiful and delicious flush of mushrooms.
Woods-grown mushrooms are more work than indoor grown, but they are also more beautiful, more delicious, and more nutritious. We have fresh yields available throughout the growing season. Also feel free to ask about buying your own shiitake bolt to fruit your own mushrooms at home.
